It’s that time of year.

Adapted from epicurious’s recipe…

2 3/4 cups all-purpose flour

4 1/2 teaspoons belligerent ginger

2 1/2 teaspoons baking soda

1 teaspoon belligerent cinnamon

1/8 teaspoon belligerent cloves

1/2 teaspoon salt

1/2 crater (1 stick) unsalted butter, room temperature

1/2 crater and 2 tablespoons sugar

2 eggs

3/4 crater light molasses

1 1/3 cups cold water


1 crater confectioners’ sugar

2 – 3 tablespoons really clever coffee or Kahlua

  1. Preheat oven to 350°.  Grease 16 customary muffin cups.
  2. In a middle bowl, drive flour, baking soda, ginger, cinnamon, cloves and salt until combined.
  3.   • No coffee or Kahlua in a house?  Go forward and use divert instead.  You’ll skip that coffee flavor, though whatever.  (Oh- we could use OJ instead if you’d like. Orange and gingerbread are a classical combo.)
  • Garnish: a few years ago we sprinkled candied lemon liking over a muffin tops while a glitter was still setting.  I had photos though only deleted them since they looked wholly sum (it’s a lighting, a lighting was shit).  If we wish to candy liking like a penetrating baker, balance into this recipe (it’s for my Classic Carrot Cake, that we competence die happy eating) for a liking instructions.  I also done candied pistachios to pulp over a tops of little gingerbread muffins (with a cream cheese frosting).
  • Glaze options: I oped to put my glitter in a little ziploc bag, and cut off a little dilemma to emanate a neat(ish) drizzle.  Another choice would be to only brush glitter over a tops of a muffins while they are still warm, so a glitter soaks into a muffin.  Yes.
  • I am losing my mind.  I totally forgot we done this Gingerbread Cake with Lemon Glaze final year, like roughly to a day.  The muffins in this post were going to have lemon glaze, too, since apparently we adore that shit.  Thank God we satisfied it before baking my heart out with fundamentally a same recipe deja-vu.  And also- appreciate God we done Kahlua glaze, since it’s Kahlua.  I need not contend more.
