Crunchy Peanut Butter Cookie Balls with Just 3 Ingredients

I love no-bake recipes which only require a few ingredients. Sometimes I just don’t have the time to spend in the kitchen for anything more complicated. These Peanut Butter Cookie Balls made by Kari Stroschein are surprisingly easy and can be made with only three ingredients!  According to Kari, every time she makes this super simple recipe, she is told how fantastic it is.

Peanut Butter Cookie Balls Recipe

Ingredients

2 cups peanut butter
1 cup powdered sugar
1 package chocolate chip cookies (13 oz pkg or about 36 cookies) (Crunchy cookies, not soft baked or chewy.)

Directions:

Using your food processor, finely crush the entire package of cookies. You should have about 3 cups of finely crushed cookies.

Mix peanut butter and powdered sugar in a bowl with a spatula. Add 2 cups of crushed cookies. Reserve the 1 cup of cookies for later.

Using a teaspoon size scoop, shape the peanut butter mixture into balls and roll in remaining crushed cookies until evenly coated. Place finished balls onto waxed paper and refrigerate for 2 hours. Store balls covered in the refrigerator before serving.

If you put your peanut butter balls in mini cupcake liners (I buy mine at the dollar store) do so just before serving. The paper liners absorb the oil from the peanut butter.

You can make this ahead of time and store in the freezer. Serve frozen or thaw in the refrigerator before serving.

Peanut Butter Cookie Balls Step 1A food processor definitely makes this job a lot easier, but if you don’t have one, you can crush these very finely by putting the cookies in a gallon sized Ziploc bag and a rolling pin.

Peanut Butter Balls in Mixing BowlYou will definitely want a small metal scoop for creating the balls. Look for them online or in a local cooking store or mass retailer.

Peanut Butter Cookie Balls Last StepKari found this recipe from Kraft and has been making these cookie balls for a while. She has slightly altered the amounts used during the process after experimenting a bit herself and finding the balls a bit too sticky the first time around.

Peanut Butter Balls RecipeKari says these are rich and peanut buttery but with a nice simple crunch, and never disappoint. I can’t wait to try them!
