Bigger is improved when it comes to muffins, eh?
(Except when you’re articulate about a muffin tops that brief over a ideally good span of jeans. Of course.)
These muffins don’t demeanour that vast in a picture, and for that we am bummed. I bought these rather gargantuous (word?) muffin cups from we don’t remember where, and was vehement to things them full of flattering most any kind of batter. So with a garland of blackened bananas on a countertop, inlet had motionless for me what was going to fill a vast polkadot buggers. A healthy banana muffin. (In my heart we wanted to make my favorite banana bread/muffin of all time, my Banana Nut Bread recipe, though there were a integrate of tying factors: no brownish-red sugar, and no nuts. And a recipe has lovely, smashing BUTTER in it, that isn’t partial of a clarification of a healthy muffin. I was gifting a muffin to a crony of mine who is utterly healthified, so we didn’t wish to be a bad change of giving a vast muffin of badness- like a drug pusher of sorts. So a healthy muffin choice was obvious. And we only satisfied that we substantially don’t caring about my preference creation process, since all we wish is a recipe.)
I wish we can find massively vast muffin cups to fill with banana batter, too. If not, only make a unchanging ones and eat two. These are so healthy that we guarantee they won’t give we that dishonourable muffin tip of your own.

4 really developed bananas, well mashed
2 eggs and 1 egg white, easily beaten
1 teaspoon vanilla
1 teaspoon light molasses*
2 cups whole wheat fritter flour*
3/4 cups sugar
1 tablespoon belligerent flax seeds*
3/4 teaspoon salt
1 teaspoon baking soda
1/2 crater chocolate chips
- Preheat oven to 350° and douse possibly 7 grievous muffin liners, 12 unchanging liners, or a vast fritter pan.
- In a vast bowl, crush bananas and brew in eggs, vanilla, and molasses. Stir until good combined.
- In a apart vast bowl, brew flour, sugar, flax seeds, salt and baking soda. Stir into banana reduction until only combined. Gently stir in chocolate (being clever not to over brew batter) and flow into prepared liners/pan.
- Bake beast muffin cups for 35 – 40 minutes, unchanging muffins for about 20 minutes, or a vast fritter vessel for 60 mins (until cake tester or wooden skewer comes out mostly clean). Set on cooling racks for 5 – 10 minutes, afterwards mislay from pans to finish cooling.
- Ripe bananas, please. Yellow ones only won’t do- they need to be some-more black than brown. I wouldn’t worry creation a bread if a bananas aren’t ready.
- *Substitutes exclusions? But of course. Use unchanging flour if we don’t have a whole wheat fritter flour. Skip a molasses if we don’t have it (or only use 3/4 crater of brownish-red sugarine instead of a unchanging sugar). Skip a flax seeds if we want.
- What kind of chocolate to use… it’s totally adult to you. Milk chocolate, semi-sweet, bittersweet, white, dim (dark IS healthier, if that matters).
- Nuts… yes, nuts are poetic in banana bread, generally walnuts. Toast some and supplement them in if you’d like. They’ll move a healthy fat to a party, that is good though something to cruise if you’re looking to take some of a fat out of your life.
