Unesco’s list aims to save traditions from globalisation.

Why do the French think this is needed?

Craftsmen breadmakers have actually voiced issue about mass-produced replicas.

“When I see the quality of bread in supermarkets, it is difficult not to obtain angry,” Dominique Anract, president of the National Confederation of French Patisseries and Bakeries (CNPBF), told food website Atabula. “The bread is frozen, some of it comes from Romania or who knows where, nothing is performed in accordance of the rules of the art.”

The conventional baguette is currently safeguarded in France by a 1993 law. To satisfy the criteria, the bread must just be made from four components: wheat flour, water, yeast and salt. It can not be frozen or consist of included preservatives.
