Fudge Mint Brownies: Perfect Layered Dessert for St. Patrick’s Day

Different flavors remind me of various times of year.  For example, anything apple and pumpkin reminds me of fall while peppermint screams winter, especially Christmas. And while cherry and chocolate are perfect for Valentine’s Day, they fall to the wayside after the holiday. Suddenly it is time for mint for St. Patrick’s Day, and not just any mint. Green mint, of course. When you combine chocolate and mint together, you have a killer combination. Merissa Alink  is back today with an amazing recipe for Fudge Mint Brownies, featuring the signature green color, perfect for March or really any time of year!

Now that is one drool worthy brownie.

Fudge Mint Brownies Recipe

Brownie Ingredients

½ cup butter
3 ounces semi sweet chocolate
1 cup sugar
2 eggs
1 teaspoon vanilla extract
¼ teaspoon salt
¼ cup all purpose flour
3 tablespoons cocoa powder

Directions

In a large bowl, melt the butter and the chocolate together in the microwave. Microwave for 30 seconds, stir, and continue to microwave until the chocolate is melted and smooth.

Add the sugar, egg, vanilla, salt, flour, and cocoa powder into the bowl and mix all the ingredients together well. Pour into a greased 8×8 baking dish. Bake at 350 for 25 to 30 minutes or until a toothpick inserted in the center of the brownies comes out clean. Let the brownies cool completely before adding the mint layer.

Mint Layer Ingredients

¼ cup butter
1 cup powdered sugar
1 tablespoon milk
½ teaspoon peppermint extract
green food coloring

Directions

In a medium bowl, mix all ingredients for frosting together. Whip with the electric mixers or with a spatula until the consistency is smooth. Pour over cooled brownies. Place the dish in the fridge after this step and let it cool for at least an additional hour.

Chocolate Topping Ingredients

¼ cup butter
½ cup semi sweet chocolate chips

Directions

In a small bowl, melt the butter and chocolate chips together in the microwave, stirring until smooth. Pour over the cooled brownies. Cool the entire pan for at least another hour before cutting and serving. Cut brownies with a clean sharp knife.
