Did you know that the peel a lot of the fiber and a majority of the vitamins in an apple? While cooking will reduce these benefits over a raw apple, it is still better to leave the peel on. The exact variety of apple will really depend upon your personal preferences.  Any cooking apple will work well for applesauce. If you like a sweet sauce, try Honeycrisp, Fuji or Golden Delicious varieties. If you prefer tart, give Cortland, Jonathon or Granny Smith a try. If you like somewhere in the middle, Braeburn, Pink Lady, McIntosh or Jonagold might be right for you.  Try using multiple apple varieties in your applesauce!  I would avoid Red Delicious apples however. They are best for eating and not ideal for cooking.
