Healthy Raw Black Velvet Fudge

This Healthy Raw Black Velvet Fudge is just like my Raw Red Velvet Fudge, but without the vibrant color!  This fudge is SUPER smooth, creamy, sweet, and chocolatey.  You’d never know it’s all natural, refined sugar free, gluten free, dairy free, AND vegan ??

Can you guess the secret ingredient that makes this fudge grey? ?

ACTIVATED CHARCOAL POWDER!

Pure coconut shell activated charcoal ?? is a well-known detoxifying ingredient, and I love the color it provides.  It doesn’t provide much flavor either (I can never detect it in anything I’ve added it to), so it’s easy to sneak into recipes.

Remember that Black Velvet Cookie Dough I made last week?  Well, I’m on a roll with that “secret ingredient” that’s turning these treats black and grey ?

You can call this “Gothic Fudge” if you like, but I like “Black Velvet” better.  This really is like red velvet, only black! ?

CHOMP.  Just look at how fudgy it is!  I’m dying, I’m dying, I’m dead ??

How does this Healthy Raw Black Velvet Fudge differ from my Raw Red Velvet Fudge?

Well, because I didn’t want the red color, I used unsweetened applesauce instead of beet puree.  For a stronger chocolate flavor, I used chocolate brown rice protein powder instead of vanilla.  I wasn’t sure how much charcoal to use, so while the fudge mixture was blending in the blender, I added 1 teaspoon of charcoal at a time.  I ended up using 3 teaspoons (or 1 tablespoon), but could probably increase this to 4 teaspoons for a darker color.

Healthy Raw Black Velvet Fudge

Prep Time: 45 minutes

Cook Time: 0 minutes

Total Time: 45 minutes

Ingredients:

Directions:

  1. Line an 8×8? brownie pan with parchment paper both ways.
  2. In a high-speed blender (I used my Vitamix), add the cashews, almond milk, applesauce, vanilla extract, stevia extract, and salt.  Blend on high speed until completely smooth.
  3. Add the protein powder, cocoa powder, and activated charcoal and blend one again until smooth.
  4. While blending, pour in the melted cacao butter.  Blend one last time until completely smooth.
  5. Pour the mixture into the prepared pan and spread it out.  Tap the pan on the counter a few times to help get rid of air bubbles.  Cover the pan with plastic wrap and refrigerate overnight.
  6. Slice, serve, and enjoy!
