Healthy Vegetarian Meal Strategy 12.24.2017

A healthy vegetarian meal plan complete with a printable wish list. This week’s meals concentrate on winter convenience foods!

Merry Christmas Eve Eve! Okay, fine, you probably aren’t going to invest tomorrow meal prepping for the week, BUT, simply in case you’re attempting to keep your meals somewhat normal after the vacation, we still have a healthy vegetarian meal prepare for you!

On the menu today: Cashew Ricotta Stuffed Shells, Farro Salad with Red Onions, Butternut Squash, and Brie, Baked Spaghetti with Kale and Tofu Ricotta, Sweet Potato, Lentil, and Kale Salad with Curry Tahini Dressing, and Guacamole and Black Bean Loaded Sweet Potatoes.

Oh, and remember to whip up a batch of my Soft, Chewy, and Gooey Paleo Chocolate Chip Cookies since in spite of how remarkable Christmas cookies are, absolutely nothing beats a really extremely great chocolate chip cookie! Cashew Ricotta Stuffed Shells from Making Thyme for Health

Baked Spaghetti with Kale, Mushrooms, and Tofu Ricotta from Hummusapien

Prep Ahead Pointer: Tofu ricotta can be made ahead of time.

Vegan/Gluten-free Substitutions: This dish is vegan. To make it gluten-free, utilize gluten-free pasta.

Wednesday

Sugary food Potato, Lentil and Kale Salad with Curry Tahini Dressing from She Likes Food

Prep Ahead Pointer: Lentils can be cooked and sweet potato can be roasted up to 2 days beforehand.

Vegan/Gluten-free Substitutions: Dish is already vegan and gluten totally free.

Thursday

Guacamole and Black Bean Loaded Sugary Food Potatoes from The Roasted Root

Prep Ahead Idea: The sweet potatoes can be baked up to 3 days ahead of time.

Vegan/Gluten-free Replacements: Dish is currently vegan and gluten complimentary.
