Fall Snacking Recipe: Peanut Butter Popcorn

Maybe it’s the college football parties, the trick-or-treating, or the endless grazing prior to Thanksgiving dinner, however treats and fall simply appear to fit. Popcorn is one of the finest fall snack and this take brings some sweet and salted deliciousness thanks to peanut butter and honey.

This recipe for peanut butter popcorn, sweetened with honey, belongs for me in memories of my family. This was our favorite movie night treat, a quick snack with sweet and gooey peanut butter covering every kernel. I significantly choose it to crunchier caramel corn. If you leave the popcorn in a covered bowl all night, the popcorn gets a little softer and the kernels and peanut butter blend together like soft, a little salted taffy with a crunch in the middle.

Peanut Butter Popcorn

1/4 cup popcorn kernels
Grease
Great salt
1/2 cup honey
1/3 cup granulated sugar
1/2 cup no-sugar added peanut butter
1/2 teaspoon vanilla extract

Have a tidy paper shopping bag or large mixing bowl prepared.

Heat a 4-quart heavy pan over medium heat and movie the bottom with vegetable oil. When the oil is hot however not smoking, include the popcorn, shake to disperse, then put a cover on the pan, leaving a little crack for steam to leave. When the first kernel pops, put the cover on all the method. As the popcorn starts popping, shake strongly to make sure the kernels are distributed uniformly. When the popping slows to a few seconds between pops, take the pan off the heat.

Pour the popcorn into the paper bag or bowl to cool, and aim to leave any unpopped kernels behind in the pan. (Coated with peanut butter caramel, the unpopped kernels are a major tooth risk). Gently salt the popcorn to taste.

Mix the honey and sugar in a small pan and give a boil. Let it simmer for about 2 minutes, then get rid of from the heat and include the peanut butter. Stir vigorously until all the peanut butter is melted, then mix in the vanilla.

Immediately put the peanut butter caramel over the popcorn and stir with a long-handled wooden spoon till it’s all layered. Let cool for at least 10 minutes prior to serving.

Dish Notes

  • Utilizing microwave popcorn: This recipe can be made with 1 standard bag of microwave popcorn, so you can replace that for the stovetop popcorn if you wish.
  • Storage: This keeps well over night. If you desire the gooeyness of freshly made popcorn, though, warm a bowl of remaining popcorn in 15-second bursts in the microwave until somewhat warm and soft.
  • Spicy popcorn: As noted in the comments, some people prefer adding something spicy, like Sriracha, in lieu of the vanilla.
