It is most definitely Autumn with the apples popping up on the trees, leaves changing to beautiful golden colors and my kitchen smelling like Autumn all rolled up into a cookie. Last week I had this craving for an oatmeal cookie. But I wanted something special, something that was warm, sweet and chewy. That’s when I decided to incorporate some fresh Jonathan apples. I’m telling you, these will just melt in your mouth and warm your tummy!
Ingredients
- 1 – 1/2 cups old fashioned rolled oats
- 1-1/2 oz box of raisins
- 1/3 cup butter, softened
- 2/3 cup light brown sugar
- 1 egg
- 1 tsp pure vanilla extract
- 1/2 cup all purpose flour
- 1/4 tsp ground cinnamon
- 1/4 tsp baking soda
- 1/4 tsp salt
In a large bowl combine butter, egg, sugar, extract, cinnamon and salt.
Add baking soda and oats, mix well.
Add flour and raisins, mix well.
Peel, core and dice one Jonathan apple, mix well into batter.
On an ungreased cookie sheet, please a large dollops of cookie batter spaced an inch or two apart.
Bake at 350 degrees F for 13 – 15 minutes.
